Quick & Easy Spicy Udon Noodles – VEGAN RECIPE

Seeing as last week it was all about fashion I thought I’d share a recipe this week – a recipe I love and make quite often too! If you follow me on Instagram (@missflossypots #shamelessplug) you will have seen these noodles all of the time. They’re super easy to make, you only need a few base ingredients (& you can add tons of things to change it up) & it’s vegan! I’ve never been a huge fan of noodles but these honestly have so much flavour; using fresh ginger and adding tons of sriracha really gives it another dimension! Ingredients:
2 x 200g packs of Vegan Udon Noodles, I use trident!
Vegetable Oil – 1 tbsp
2 cloves of garlic
1 Red Onion
Thumb of grated fresh ginger ( 1tbsp)
2 tbsp cashew butter
1/2 cup water
1 tbsp lime juice (or lemon works just fine)
2 tsp sriracha (try 1 tsp first – especially if you don’t like heat!)
1 – 1/2 tbsp Soy Sauce
1/2 tbsp sesame seed oil
2 Tbsp toasted sesame seeds

Smokey & Salty Almonds:
A handful of toasted unsalted almonds
5 drops of liquid smoke
Salt to taste

Add-ons that taste great in this:
Baby corn
Carrot (sliced into thin strips)
Broccoli
Bok Choy
Green Beans

Method:
Begin by heating up the vegetable in a medium to large sized frying pan on a medium to high heat.
Whilst the oil is heating up slice the red onion, grate the ginger and finely diced the garlic.
Now add the red onion, ginger and garlic to the pan and begin to cook until the red onion is tender and starting to caramelize.
Now add the cashew butter & lime juice and stir until it gets to a saucy consistency – if the mix gets too dry just add water (I do this all of the time).
Next add the two packs of the noodles and break them up in the pan stirring continuously until all of the noodles begin to get coated in the sauce.
Finally add the sriracha (I add this last so it doesn’t burn), soy sauce, sesame seeds and sesame seed oil and stir for 3-4 minutes until everything is evenly coated and hot!

In a small pan add all of the ingredients for smokey & salty almonds and cook on a medium to high heat until the almonds are lightly browned. These are delicious on their own or even better as toppings for meals like this one!

Serve in a bowl topped with fresh spring onion, the smokey & salty almonds and even more sriracha if you’re keen!!! Enjoy! 🙂
